The “chimichurri” is one of the most popular dressings in Argentina, along with the salsa criolla. It consists of a blend —slightly spicy!— of oregano, red bell pepper, parsley, paprika, garlic and red wine vinegar. Chimichurri is traditionally used as an accompaniment to barbecued meat. It is especially good for chorizo (a fermented and smoked pork sausage). It can also be used as a marinade, dipping sauce and even to dress salads.
